Cabbage
Cabbage is one of the easiest vegetables to grow with just water. You only need the bottom part, so consuming the leaves won’t be a problem. Start by filling a shallow container with water. Place the root end of the cabbage inside and place it somewhere where it has plenty of light. Watch your cabbage miraculously regrow!
